When you have selected the right breast the next step in preparing Chicken cordon bleu is to pound it into a thin slab about one quarter inch thick. The larger the breast is to start with, the larger the final product will be and the more you will be able to stuff it with. In this case you will be using cheese and ham.

When the chicken is pounded flat you are ready for the next step in preparing your Chicken cordon bleu. Lightly sprinkle both sides with salt and pepper, place a slice of ham and a slice of Swiss cheese on it and roll it up. Secure the side with toothpicks and put it in a baking dish. You can either sprinkle it with breadcrumbs at this point or roll it in them before placing it in the baking dish.
